Salmon Patties

1 15oz. can salmon (I prefer the pink salmon)

2 eggs, beaten

1 cup crushed cracker crumbs

2 Tbs cornmeal

1/2 tsp. seasoned salt

dash of pepper

oil for frying (Canola or vegetable oil)

Open the can of salmon and drain the liquid off of it. Pour the salmon in a bowl and pick through it and remove the skin and any bones you see. Some people just mix all of the skin and the little soft bones into the patties, but I prefer not to do that. Mix the crushed cracker crumbs, eggs, corn meal, and seasonings into the salmon.Shape into uniform size patties about 1/2 inch thick. The mixture should stick together well. Pour enough oil in a pan to cover the bottom and heat to medium. Place the salmon in the pan. Fry on each side until golden brown. Remove to a paper towel lined plate.

Arkansas Ailing Dinner

2 med. Onions, sliced
1 small green pepper, minced
1 1/2 Tbsp. fat
1/2 lb. ground beef
1 C. cooked tomatoes
1/4 C. uncooked rice
1/2 tsp. chili powder
1 tsp. salt
dash pepper

Heat yer oven to 350. Now cook them onions and green pepper in hot fat til yeller. Add that ole' beef, and fry'er up til she falls apart. Stir in them other items. Pour in a pan thats bout 1 quart big, and cook 'em up bout an hour. Now cover the top there, but remove her for the last 15 minutes. And then she good to go. This here's another'n you'll take a like'n too.

SAUSAGE BALLS

2 C. Sausage (I use 1 stick)
1 C. Grated American Cheese
1/2 C. grated Cheddar Cheese
1 egg, beaten (this holds it together)
1-1 1/2 C. bisquick (I like 1 C.)

Crumble sausage in bowl, and add cheese and egg. Mix really well. Sprinkle Bisquick over your mixture. Mix again. Chill it for a while. Place on sprayed cookie sheet for 25 minutes at 375. I think you'll like 'em.

Crock Pot Bacon and Cheese Potatoes

Ingredients

1/4 pound bacon, diced – I bake it first in the oven so that it is “done” and browned then I dice it and place in the crock pot.
2 medium onions, thinly sliced
4 medium potatoes, thinly sliced (or if you use a new potato then halve)
1/2 pound cheddar cheese, thinly sliced (shredded is fine)
salt and pepper
butter
Green Onions (optional)

Instructions

Line crockpot with foil, leaving enough to cover the potatoes when finished – this will help to not stick and to steam the potatoes.
Layer half each of the bacon, onions, potatoes and cheese in crockpot. Season to taste with salt and pepper and dot with (real) butter.
Repeat layers of bacon, onions, potatoes and cheese. Dot with butter.
Cover with remaining foil.
Cover and cook on low for 10-12 hours.

Arky Brownies

You will need:

2 sticks melted butter
2 cups sugar
1 1/2 cups self-rising flour (or you can use all-purpose for less cakey)
1/8 tsp salt
1/2 cup cocoa
4 eggs
1 1/2 cup chocolate chips (or you could do butterscotch, or nuts)
1 tsp vanilla

To Make:

Mix all and pour into greased dish. Bake at 350 for at least 30 minutes.

Hint Hint: Make sure and spray or oil your pan!

My Fav. Recipe From The Hills Of Ark

Family Recipe Tea
1 64 oz. Bottle Apple Juice
1 Small can Frozen Orange Juice
2 C. Water
1 tsp. Nutmeg
1 Stick cinnamon

Heat all ingredients in crock pot until hot, then serve in favorite cup. Keeps in frig. for 1 week. I pull it out every morning and put it back in crock and turn on for that day.

Country Girl In A Hurry Biscuit

2 cups Bisquick baking mix

1/2 cup cold water
3/4 cup shredded sharp cheddar cheese
1/4 cup butter
A few shakes of dried parsley
A few shakes of garlic powder
Just a little salt and pepper

Directions:

Heat oven to 450. Combine all ingredients, dough will be sticky!.... form into biscuit shape and place on an ungreased baking sheet . Melt additional butter sprinkled with parsley and garlic and brush on biscuit tops. Bake until done, approx. 8 minutes. Biscuits will begin to brown.
